If I just touch the tip of the probe to a surface, will I get an accurate reading of that surface temperature

Here is the answer to your question. Sticking the tip of the probe to a surface will give you a reading but it will be inaccurate since it is not designed for that. The probe has to be immersed or penetrate the surface to provide an accurate reading. If you need to  measure surface temperature, you may need to use another device , which is the Testo-T2 Temp stick (surface probe). This is designed to measure surface temperature and it is very compact and portable.
